Chili peppers


Several different types of chilli are used in cooking. There are three stages of ripeness for a chile pepper: green, red (mature), and dried deep red brown or black. To ripen green chilies, set in the sun and the chilies will ripen to partially red. Green chili peppers are mainly used in making green curry paste. For most Thai dishes call for chili peppers, either green or red.
